Way back in the old days I remember having the option to select the objects to be rendered with a window. Does that feature still exist and where do I find it?

Render Region in the walkabout window.

It dosen't work the same as it did back in the AR3 days. Used to be, if you needed to  fix something after a render, you could and just redo a portion and overlay it in photoshop. With the way lighting is done now, getting the lighting identical will be difficult.

I'm not talking about a walk thru.

If I have a number of objects in the AutoCAD model but, only want to select one object to render, AR3 gave you the option to select a portion of the model with a window. That option no longer exists? Is the only option now to render the entire model and crop it in Photo?

I'm pretty sure the ability to render a selection set doesn't exist anymore. Tools like layer or visibility manipulation will work.
