For planar architectural glass I would use a single sheet and tag the glass as Thin.
For some ACA models, or any other situations where it may be difficult to tag the glass as Thin by using Object Properties, it's better to model the glass as two sheets and omit the Thin property. (I'm probably going to add a Thin property to the Material Editor to better handle this case.)
Curved glass and non-architectural glass should be modeled accurately.
