It might be best to model the coping. Especially on a curved pool. Otherwise, you may have to break your coping into pieces to get the mapping close.
This sample was made by extruding the coping around the pool. Then using the same path, used array to spread a thin solid for the grout, which I used interfere to create the shapes.
Yes, it will add some weight to the file, but I don't think you'll get it close with just a material (unless its a square pool and then planar mapping will probably work out.
good. Its a bunch of work, but I think in the long run, really makes a difference.
The samples are fro an old ar3/4 job. That material used some fake caustics which really doesn't work very well in nXt.
